Our rustic breads are made using a slow fermentation process allowing natural fermentation to develop the flavors of grains, a firm crumb, and a flavorful crust. 

We use organic ingredients where available, stone milled flours, minimal amounts of salt, yeast and sugar, and each loaf is baked to perfection.

Italian

Organic unbleached flour, water, olive oil, sugar, salt, yeast

This classic Italian bread is light and crusty with a soft and almost sweet crumb.  The pinch of sugar roasts the crust, and the drop of  olive oil makes the crumb chewy.  This is an excellent choice for garlic breads, sandwiches, or as an accompaniment to your meal.  It is the sort of home baked bread many of us grew up with – made with love and soothing to the soul!

Pugliese        

Organic unbleached flour, semolina flour, water, sugar, salt, yeast        

Pronounced "Pool-Yay-Zee."  Pugliese is the bread of Puglia, a region of southern Italy.  Its characteristics are a bubbly interior and a delicate crust and more tender interion, a perfect accompaniment for your dinner or for the sport of dipping and slurping.

Whole Grain    

Organic whole wheat, water, organic cracked grains of: wheat, rye, corn, oats, spelt, kamut and flaxseed, honey, salt, yeast               

This bread is made by soaking cracked grains to soften them, and incorporating them into a 100% whole wheat dough.  The loaves are baked slowly at a lower temperature so they retain all of the valuable vitamins, minerals and nutrients whole grains have to offer.  This is as basic as bread gets.  It is hearty, earthy and delicious!

Sourdough     

Organic unbleached & Whole Wheat flour, water, salt, levan, yeast 

20% whole wheat and a San Francisco starter make this round loaf perfect for sandwiches, toasting, pairing with sharp cheeses or with a hearty bowl of soup!

Baguette       

Organic unbleached wheat flour, water, olive oil, salt, yeast   

Mini –Baguette 

In addition our mini baguette is seeded with sesame, sunflower and poppy seeds.                

Beginning with our slow fermented dough, we build flavor and texture with our mixing and shaping steps to coax the maximum flavor from the wheat, and to develop the classic baguette texture.  Crusty, chewy, and robust flavored crust are the hallmarks of this perfectly portable bread.  It is ideal for grilling, picnic sandwiches, or just eating out of hand!

Roasted Garlic & Parmesan

Organic unbleached flour, water, parmesan cheese, roasted garlic, salt, sugar, yeast          

Freshly roasted garlic and parmesan cheese are baked into this Italian style bread.  Soft and tender, it is perfect for adding something special to a sandwich, warmed as an accompaniment to your pasta dinner, or as a platform for your favorite garlic bread recipe. Have you tried a grilled cheese sandwich on roasted garlic bread?

Kalamata Olive & Gorgonzola

Organic unbleached and Organic whole Wheat flour, water, Kalamata olives, gorgonzola, salt, levan, yeast        

The sour flavor of our sourdough bread lends perfectly to the tang of Kalamata olives and robust gorgonzola cheese.  This classic pairing of bread, cheese and olives is simply perfect!

Scones  
Organic unbleached wheat flour, Butter, Cream, sugar, salt, Baking Powder.  In your favorite flavors:  Plain, Currant, Oatmeal Walnut with Currants
